1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/3 cup melted butter
24 oz cream cheese, softened
3/4 cup granulated sugar
1/4 cup brown sugar
1 tsp vanilla extract
3 large eggs
1/2 cup sour cream
1/2 cup brown sugar (for topping)
1/4 cup corn syrup
1/4 cup butter
1/2 tsp vanilla extract (for topping)
1 1/2 cups chopped pecans
Instructions
1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into a springform pan. Bake for 10 minutes. Cool.
2. In a large bowl, beat cream cheese until smooth. Add sugars, eggs one at a time, sour cream, and vanilla. Mix until just combined.
3. Pour filling over crust. Bake in a water bath for 60–70 minutes. Turn off oven, crack the door, and rest for 1 hour. Chill for at least 4 hours or overnight.
4. For topping, heat butter, brown sugar, corn syrup, and vanilla in a saucepan. Stir until smooth. Add pecans and simmer for 2–3 minutes.
5. Cool topping slightly and pour over chilled cheesecake before serving.
Notes
Let cheesecake cool completely before adding the topping to prevent melting.
