2 tablespoons butter
4 cloves garlic, minced

1 tablespoon lemon juice
2 cups cooked white rice
1 cup cherry tomatoes
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
0.5 teaspoon salt
0.25 teaspoon black pepper
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Season shrimp with salt and pepper, then sear for 1-2 minutes on each side. Remove and set aside.
3. In the same skillet, add butter and garlic. Sauté until fragrant.
4. Stir in heavy cream and lemon juice. Simmer for 2-3 minutes until slightly thickened.
5. Return shrimp to the pan and toss to coat in sauce. Simmer another minute.
6. In another pan, sauté cherry tomatoes in olive oil until blistered.
7. Stir parsley and olive oil into cooked rice.
8. Plate rice, top with shrimp and sauce, and garnish with tomatoes and more parsley.
Notes
For more depth of flavor, grill the shrimp instead of pan-searing.
Add red pepper flakes to the cream sauce if you like a touch of heat.
