Ingredients

1 lb lobster meat

1 cup diced carrots

1 cup green peas

1/2 cup diced celery

4 tbsp unsalted butter

1/4 cup all-purpose flour

1 cup heavy cream

1 cup seafood or lobster stock

1/3 cup dry white wine

1 small shallot, minced

2 cloves garlic, minced

1 tsp fresh thyme leaves

2 tbsp chopped parsley

1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)

Salt and pepper to taste


Instructions

1. In a large skillet, melt butter over medium heat. Sauté shallots, garlic, and celery until softened.

2. Stir in flour to create a roux and cook for 1–2 minutes.

3. Gradually whisk in wine, seafood stock, and cream until smooth and slightly thickened.

4. Add diced carrots, peas, and lobster meat. Simmer for 5–6 minutes.

5. Season with thyme, parsley, salt, and pepper.

6. Preheat oven to 400°F. Transfer filling to a greased baking dish.

7. Roll out puff pastry and lay over the filling. Seal edges and cut slits for steam.

8. Brush with egg wash and bake for 25–30 minutes or until golden brown.

9. Let rest for 5 minutes before serving.

Notes

If using frozen lobster, thaw it fully and pat dry before adding to the filling.

To make individual pot pies, divide filling into ramekins and top each with pastry circles.
