Ingredients
100g high-quality semi-sweet or dark chocolate
100ml heavy cream
2 tbsp salted caramel sauce (plus more for drizzling)
1 tbsp unsalted butter
Flaky sea salt, for topping
Instructions
1. Chop the chocolate finely and place in a heatproof bowl.
2. Heat the heavy cream until just simmering, then pour over the chocolate. Let sit for 2 minutes.
3. Stir the mixture gently until smooth. Add butter and 2 tbsp of salted caramel sauce, and stir until fully combined.
4. Refrigerate the ganache for 1–2 hours until firm.
5. Scoop out the ganache and roll into balls. Place on parchment-lined tray.
6. Drizzle remaining warm caramel over the truffles.
7. Sprinkle each truffle with flaky sea salt.
8. Chill again until the caramel is set.
Notes
Use a melon baller or small cookie scoop to get uniform truffle sizes.
For an extra fancy finish, roll truffles in crushed nuts before drizzling caramel.
