Ingredients
2 heads broccoli, chopped into florets
1 large Honeycrisp apple, chopped
1/4 medium red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/2 cup walnuts, toasted
1/3 cup dried cranberries
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper, to taste
Instructions
1. Rinse and chop the broccoli into small bite-sized florets. Optional: blanch for 1 minute and ice bath after.
2. Core and slice the Honeycrisp apple into chunks. Thinly slice the red onion.
3. Toast the walnuts in a dry pan over medium heat for 3-4 minutes, stirring often.
4. In a small bowl, whisk olive oil, vinegar, honey, Dijon mustard, salt, and pepper.
5. Combine broccoli, apples, red onion, walnuts, cranberries, and feta in a large bowl.
6. Drizzle dressing over the salad and toss gently to coat evenly.
7. Let chill for 15–20 minutes to allow flavors to meld before serving.
