Ingredients
6 cups Rice or Corn Chex cereal
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup unsalted butter
1 teaspoon vanilla extract
1 1/2 cups dry brownie mix
2 tablespoons Dutch processed cocoa powder (optional)
Instructions
1. In a microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring between each, until smooth. Stir in vanilla extract.
2. Place Chex cereal in a large mixing bowl. Pour the chocolate mixture over the cereal and fold gently until evenly coated.
3. Add brownie mix and cocoa powder (if using) to a large Ziploc bag or sealed container. Transfer the chocolate-coated cereal and shake vigorously until fully coated.
4. Spread mixture on a parchment-lined baking sheet. Let cool for 20 minutes.
5. Transfer to a serving bowl or airtight container and enjoy!
Notes
This recipe works best with fresh cereal to maintain that perfect crunch.
If you’re gifting, store the mix in mason jars for a pretty (and tasty) presentation!
