Ingredients
1.5 lbs chicken breasts
1 cup long-grain white rice (uncooked)
1 can (10.5 oz) cream of chicken soup
2 cups chicken broth
1 packet onion soup mix
2 tablespoons butter (melted)
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
2. In a bowl, mix the uncooked rice, cream of chicken soup, and chicken broth. Pour into the prepared dish.
3. Place the raw chicken breasts on top of the rice mixture.
4. Season chicken with salt and pepper.
5. Sprinkle onion soup mix evenly over the chicken.
6. Drizzle melted butter on top.
7. Cover tightly with foil and bake for 60 minutes.
8. Uncover and bake for another 15–20 minutes until chicken is cooked through.
9. Let rest for 5–10 minutes before serving.
Notes
Add a splash of broth when reheating leftovers to restore creaminess.
You can swap in boneless chicken thighs if you prefer dark meat.
