A vibrant and crunchy slaw made with fresh cabbage, carrots, and cilantro, tossed in a flavorful sesame-soy dressing. Perfect as a side dish or a topping for tacos and sandwiches.
Ingredients
2 cups green cabbage, thinly sliced
2 cups purple cabbage, thinly sliced
1 cup carrots, julienned
1/4 cup fresh cilantro, chopped
2 tablespoons sesame seeds (black or white)
1/4 cup toasted almonds or peanuts (optional)
Dressing:
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
1 tablespoon soy sauce (or tamari for gluten-free)
1 tablespoon honey or maple syrup
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/2 teaspoon red pepper flakes (optional, for spice)
Instructions
- Prepare the Vegetables – Thinly slice the green and purple cabbage, julienne the carrots, and chop the cilantro. Place them in a large mixing bowl.
- Make the Dressing – In a small bowl or jar, whisk together the sesame oil, rice vinegar, soy sauce, honey, ginger, and garlic. Shake or whisk until well combined.
- Toss the Slaw – Pour the dressing over the vegetables and toss well using tongs or clean hands to evenly coat everything.
- Let It Rest – Allow the slaw to sit for at least 10–15 minutes to let the flavors meld together.
- Add the Finishing Touches – Sprinkle sesame seeds and optional toasted nuts for extra crunch. Garnish with extra cilantro if desired.
- Serve and Enjoy – Serve immediately for a crisp texture, or refrigerate for up to an hour for enhanced flavor.
