Ingredients

3 pounds beef short ribs

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 large onion, chopped

3 carrots, chopped

2 celery stalks, chopped

4 cloves garlic, minced

2 tablespoons tomato paste

1.5 cups dry red wine

2 cups beef broth

2 sprigs fresh rosemary

4 sprigs fresh thyme

1 bay leaf


Instructions

1. Pat short ribs dry and season with salt and pepper.

2. Heat olive oil in Dutch oven over medium-high. Sear ribs until browned. Remove and set aside.

3. Sauté onion, carrots, and celery in the same pot until soft. Add garlic and cook for 1 minute.

4. Stir in tomato paste; cook for 2 minutes. Pour in red wine and scrape browned bits. Simmer 5 minutes.

5. Return ribs to pot. Add beef broth and herbs. Bring to a simmer.

6. Cover and braise in the oven at 325°F for 2.5 to 3 hours until meat is tender.

7. Remove ribs. Strain and reduce sauce if needed. Skim fat.

8. Serve hot over mashed potatoes or polenta.

Notes

For best results, sear the ribs in batches to avoid overcrowding the pan.

Make this a day ahead for deeper flavor—the sauce gets even richer overnight.
