Ingredients
1 pound chicken sausage (pre-cooked), sliced
2 medium zucchini, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 cup broccoli florets
1/2 red onion, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese (optional)
Instructions
1. Preheat the oven to 425°F (220°C).
2. Slice the chicken sausage into 1-inch rounds and chop all the vegetables into bite-sized pieces.
3. In a large mixing bowl, toss the sausage and vegetables with olive oil, garlic powder, Italian seasoning, salt, and pepper.
4. Spread the mixture in a single layer on a parchment-lined baking sheet.
5. Roast in the oven for 20–25 minutes, stirring halfway through, until veggies are tender and slightly caramelized.
6. Remove from the oven and sprinkle with Parmesan cheese if using.
