Ingredients

12 oz spaghetti noodles

2 cups cooked, shredded chicken (rotisserie works great)

1 can (10.5 oz) cream of mushroom soup

1/2 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup chicken broth

1/2 cup diced red bell pepper

1/2 cup sliced mushrooms (optional)

1/4 cup diced onion

1 clove garlic, minced

1 tbsp olive oil

Salt and black pepper to taste

Fresh parsley or chives for garnish


Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper for 3–4 minutes. Add mushrooms and garlic; cook another 2–3 minutes.
  3. Stir in cream of mushroom soup, sour cream, and chicken broth. Mix until smooth and heated through.
  4. Add 1 cup of shredded cheddar cheese; stir until melted.
  5. Fold in the shredded chicken and cook for 2–3 minutes until warmed.
  6. Combine the cooked pasta with the sauce. Toss until evenly coated.
