Ingredients

4 cups peeled and finely diced apples

1 cup brown sugar

1/2 cup granulated sugar

2 tablespoons lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon vanilla extract

1 tablespoon butter

1/4 teaspoon salt


Instructions

1. Peel, core, and finely dice the apples.

2. Add the apples, brown sugar, granulated sugar, lemon juice, cinnamon, nutmeg, and salt to a heavy saucepan.

3. Cook over medium heat, stirring often, until the sugars dissolve and the apples begin releasing their juices.

4. Reduce the heat to medium-low and simmer for 25 to 30 minutes, stirring frequently, until the apples are very soft.

5. Stir in the butter and vanilla extract.

6. Continue cooking for 5 to 10 more minutes until the jam is glossy and thick.

7. Lightly mash some of the apples with the back of a spoon for a more spreadable texture.

8. Spoon into clean jars and let cool completely before sealing and refrigerating.

Notes

Use firm apples like Honeycrisp, Fuji, or Gala so the jam keeps a nice texture and full apple flavor.

Stir often near the end of cooking so the sugars do not catch on the bottom of the pan as the jam thickens.
