Ingredients
16 ounces frozen chopped spinach, thawed and drained
1 cup feta cheese, crumbled
4 large eggs
1 medium yellow onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano or dill (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft, about 4-5 minutes. Add garlic and cook for 30 seconds more. Remove from heat.
2. Thoroughly drain thawed spinach using a towel or cheesecloth to remove all moisture.
3. In a large bowl, combine spinach, cooked onion and garlic, feta, eggs, herbs, salt, and pepper. Mix until fully incorporated.
4. Grease an 8×8-inch baking dish and pour in the spinach mixture.
5. Bake in a preheated 375°F (190°C) oven for 30-35 minutes until set and lightly golden.
6. Let rest for 5-10 minutes before slicing and serving.
