Ingredients
6 oz salmon fillets (4 portions)
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
0.5 teaspoon salt
0.25 teaspoon black pepper
1.5 cups diced ripe mango
0.5 cup diced red onion
0.5 cup diced cucumber
1 small jalapeño, minced
2 tablespoons chopped cilantro
2 tablespoons fresh lime juice
Optional: lemon wedges for serving
Instructions
1. Dice mango, cucumber, red onion, and jalapeño. Mix with cilantro and lime juice. Chill.
2. Pat salmon dry, brush with olive oil.
3. Mix paprika, garlic powder, salt, and pepper. Rub over salmon.
4. Preheat grill to medium-high. Grill salmon skin-side down for 4–5 minutes per side.
5. Remove from grill and top with chilled mango salsa.
6. Serve with lemon wedges and enjoy immediately.
