Ingredients
1 lb ground beef
1.5 lb baby Yukon Gold potatoes, halved
1 medium yellow onion, diced
3 cloves garlic, minced
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Place halved potatoes cut-side down and sear for 5–7 minutes until golden. Flip and cook the other side another 5 minutes. Transfer to a plate.
2. In the same skillet, add ground beef. Break it apart and cook until browned. Drain excess grease if necessary.
3. Add diced onion and cook for 3 minutes until soft. Stir in garlic and cook another 30 seconds.
4. Return the potatoes to the skillet. Add paprika, salt, and pepper. Stir everything together and cook another 2–3 minutes to combine flavors.
5. Garnish with chopped fresh parsley and serve hot.
