Ingredients

1 pound ground beef

1 medium onion, diced

1 can (10.5 oz) cream of mushroom soup

½ cup milk

4 cups potatoes, thinly sliced (about 45 medium potatoes)

2 cups shredded cheddar cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown ground beef with diced onions until cooked through. Drain excess fat.
  3. In a bowl, whisk together cream of mushroom soup and milk until smooth.
  4. Layer half the sliced potatoes in the baking dish.
  5. Top with half the beef mixture and half the soup mixture.
  6. Repeat layers, finishing with the remaining soup mixture.
  7. Sprinkle cheese evenly on top.
  8. Cover with foil and bake for 60 minutes.
  9. Uncover and bake an additional 15-20 minutes until potatoes are tender and cheese is golden.
  10. Let rest for 5 minutes. Garnish with parsley and serve.
