Ingredients

Macaron Shells:

1 cup (100g) almond flour (sifted)

1 3/4 cup (200g) powdered sugar

3 egg whites, room temp

1/4 cup (50g) granulated sugar

Gel food coloring (optional)

Buttercream Filling:

1/2 cup unsalted butter (softened)

1 1/2 cups powdered sugar

1 tsp vanilla extract

12 tbsp heavy cream


Instructions

  1. Line 2 baking sheets with parchment or silicone mats. Sift almond flour and powdered sugar together.
  2. Beat egg whites until frothy, slowly adding granulated sugar. Whip to stiff peaks. Add food coloring.
  3. Gently fold in almond flour mix until batter flows like lava and forms ribbons.
  4. Pipe 1.5-inch circles on baking sheets. Tap sheets to remove bubbles. Let rest 30–60 mins.
  5. Bake at 300°F for 15–18 mins until they form “feet” and don’t wobble. Cool fully.
  6. Make buttercream by whipping butter, sugar, vanilla, and cream.
  7. Pipe filling onto half the shells and sandwich with the rest.
  8. Refrigerate 24 hrs before serving for best texture.
