2 cups cooked shredded chicken
1/2 cup chopped sun-dried tomatoes
2 cups fresh spinach
1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Heat the olive oil and butter in a large skillet or Dutch oven over medium heat.
2. Add the chopped onion and cook for 3 to 4 minutes until softened.
3. Stir in the garlic and cook for 30 seconds until fragrant.
4. Add the arborio rice and stir for 1 to 2 minutes to lightly toast the grains.
5. Pour in 1 cup of warm chicken broth and stir until mostly absorbed.
6. Continue adding the broth, about 1/2 cup at a time, stirring often and letting each addition absorb before adding more.
7. When the rice is tender and creamy, stir in the heavy cream, parmesan, Italian seasoning, crushed red pepper flakes, salt, and black pepper.
8. Add the shredded chicken, sun-dried tomatoes, and spinach.
9. Stir until the chicken is heated through and the spinach is wilted.
10. Finish with fresh parsley and serve hot, adding a splash of broth if needed to loosen the risotto before serving.
Notes
Use warm broth, not cold, so the rice cooks evenly and stays creamy.
