Ingredients
1 1/2 pounds chicken breast, cut into cubes
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
1 cup cucumber, diced
1/2 cup feta cheese, crumbled
1/2 cup Kalamata olives
1/4 cup red onion, thinly sliced
1 tablespoon fresh parsley, chopped
lemon wedges for serving
Instructions
1. Cut the chicken breast into even bite sized cubes and place them in a large bowl.
2. In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
3. Pour the marinade over the chicken and toss well to coat every piece. Cover and refrigerate for 30 minutes.
4. Thread the marinated chicken onto skewers, leaving a little space between each piece.
5. Preheat a grill or grill pan over medium high heat.
6. Grill the skewers for 10 to 12 minutes, turning every few minutes, until the chicken is cooked through and lightly charred.
7. In a small bowl, stir together the Greek yogurt, 1 tablespoon lemon juice, and fresh dill to make the sauce.
