Description

Easy Pot Roast Made With Frozen Meatballs is the kind of cozy comfort food that makes dinner feel special without making the process hard. Juicy meatballs simmer in a rich beefy gravy with tender carrots and celery, then get spooned over creamy mashed potatoes for a warm and satisfying meal. It is a perfect easy dinner, weeknight comfort food, family meal, and one of my favorite dinner ideas when I want a hearty homemade-style recipe with very little effort.


Ingredients

1 bag frozen homestyle meatballs, about 26 ounces

2 cups baby carrots

2 stalks celery, chopped into bite-size pieces

2 cups beef broth

1 packet brown gravy mix, 0.87 ounce

1 packet onion soup mix, 1 ounce

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1/2 teaspoon black pepper

4 cups prepared mashed potatoes


Instructions

1. In a large deep skillet, Dutch oven, or slow cooker insert, whisk together the beef broth, brown gravy mix, onion soup mix, Worcestershire sauce, garlic powder, and black pepper until smooth.

2. Add the frozen meatballs, baby carrots, and chopped celery, then stir well so everything is coated in the gravy mixture.

3. For stovetop cooking, cover and simmer over medium-low heat for 25 to 30 minutes, stirring occasionally, until the carrots are tender and the meatballs are heated through.

4. If using a slow cooker, cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until hot and tender.

5. Remove the lid for the last few minutes if needed and let the sauce thicken slightly until it coats the meatballs and vegetables.

6. Spoon mashed potatoes onto plates or bowls, then top with the meatballs, vegetables, and plenty of gravy before serving.

Notes

For the best texture, use homestyle frozen meatballs instead of Italian-style meatballs so the flavor stays close to classic pot roast.

If the gravy gets too thick while reheating, stir in a splash of beef broth until it loosens back to a silky consistency.
