Description

This Easy Rotisserie Chicken Hash Brown Casserole is the kind of cozy, crowd-pleasing meal that makes dinner feel effortless and satisfying at the same time. With tender shredded chicken, creamy sauce, crispy-edged hash browns, and plenty of melty cheddar, it’s a comforting easy recipe that works beautifully for a quick breakfast-for-dinner idea, an easy dinner, meal prep, potlucks, and family food ideas when you need something warm, filling, and dependable.

Ingredients

3 cups rotisserie chicken, shredded

30 ounces frozen hash browns

10.5 ounces cream of chicken soup

1 cup sour cream

2 cups cheddar cheese, shredded

1/2 cup milk

1/2 cup onion, finely chopped

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons butter, melted

1 tablespoon parsley, chopped

Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. In a large bowl, mix the cream of chicken soup, sour cream, milk, onion, garlic powder, salt, and black pepper until smooth.

3. Add the shredded rotisserie chicken, frozen hash browns, and 1 1/2 cups of the cheddar cheese.

4. Stir everything together until the chicken and potatoes are evenly coated.

5. Spread the mixture into the prepared baking dish.

6. Top with the remaining 1/2 cup cheddar cheese and drizzle the melted butter over the top.

7. Bake for 45 to 50 minutes, until hot, bubbly, and golden around the edges.

8. Let the casserole rest for 5 to 10 minutes before serving.

9. Sprinkle with chopped parsley and serve warm.

Notes

Let the hash browns stay slightly frozen before mixing so the casserole keeps a better texture and does not turn watery.

For extra color and a crispier top, broil the casserole for 2 to 3 minutes at the end while watching it closely.
