Ingredients

1 lb smoked sausage, sliced into rounds

1 1/2 lb baby potatoes, halved

3 cups broccoli florets

2 bell peppers, sliced

1/2 tsp paprika

1 tsp salt

1/2 tsp black pepper

1/3 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped


Instructions

5. Remove the pan from the oven and add the sausage and vegetables to the pan with the potatoes. Spread everything into an even layer.

6. Roast for 20 to 25 minutes more, stirring halfway through, until the potatoes are tender and the vegetables are roasted.

7. Sprinkle Parmesan cheese over the hot pan and finish with chopped parsley before serving.

Notes

Cut the potatoes into similar sizes so they roast evenly and finish at the same time.

Do not overcrowd the pan or the vegetables will steam instead of getting those delicious browned edges.
