Ingredients

1 pound large shrimp, peeled and deveined

1 cup stone-ground or quick-cooking grits

2 cups water

2 cups milk or cream

1 cup sharp cheddar cheese, shredded

4 tablespoons butter

4 slices bacon

2 cloves garlic, minced

3 green onions, chopped

1 teaspoon Cajun seasoning

1 teaspoon salt

1/2 teaspoon black pepper

Instructions

1. In a saucepan, bring water, milk, and salt to a simmer. Slowly whisk in the grits and reduce heat to low. Cook, stirring frequently, until creamy.

2. Add butter and shredded cheddar to the grits, stirring until melted and smooth.

3. In a skillet, cook bacon until crispy. Remove and crumble.

4. In the bacon drippings, sauté garlic until fragrant. Add shrimp and Cajun seasoning. Cook 2-3 minutes per side until pink and opaque.

5. Spoon grits into serving bowls. Top with shrimp, crumbled bacon, and chopped green onions.

6. Serve immediately while hot and creamy.

Notes

Stir the grits frequently to avoid lumps and ensure creaminess.

For extra heat, add a pinch of cayenne or hot sauce to the shrimp while cooking.
