Ingredients

1 lb ground beef

1 cup cheddar cheese, cut into 1-inch cubes

1/2 cup breadcrumbs

1/4 cup milk

1 large egg

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/3 cup ketchup

2 tbsp brown sugar

2 tbsp chopped fresh parsley or chives (optional, for garnish)


Instructions

1. Cut cheddar cheese into small 1-inch cubes and set aside.

2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.

3. Take a heaping tablespoon of the mixture, flatten it, and place a cheese cube in the center. Form into a ball, sealing the cheese inside.

4. Place meatballs on a parchment-lined baking sheet.

5. Mix ketchup and brown sugar in a small bowl. Spoon the glaze over each meatball.

6. Bake at 375°F (190°C) for 18–22 minutes, until fully cooked and bubbling.

7. Remove from oven, garnish with fresh parsley or chives, and serve warm.

Notes

Use freshly shredded cheese and cube it yourself for the best melt and flavor.

Avoid overmixing the beef mixture to keep the bites tender.
