Ingredients
2 cups cooked jasmine rice (day-old recommended)
2 large eggs
2 tablespoons soy sauce
1/2 cup diced carrots
1/2 cup green peas
2 green onions, chopped
1 tablespoon cooking oil
1/2 teaspoon sesame oil (optional)
1 clove garlic, minced (optional)
Instructions
1. Dice the carrots, chop the green onions, and separate the cold rice clumps with a fork. Beat the eggs in a small bowl.
2. Heat a bit of cooking oil in a wok or skillet over medium-high heat. Scramble the eggs until just set. Remove and set aside.
3. Add a little more oil and sauté the carrots until tender. Add green peas and garlic if using, and stir-fry briefly.
4. Add the rice to the pan and stir-fry, breaking up clumps and letting the rice toast slightly.
5. Return the eggs to the pan, drizzle in the soy sauce, and mix until evenly combined.
6. Stir in the green onions and sesame oil for a fragrant finish. Serve hot.
Notes
Use cold, day-old rice for the best texture.
