Ingredients

3 large eggs

1/2 cup granulated sugar

1/3 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup heavy cream

3 tablespoons powdered sugar

1 cup fresh cherries, pitted and halved

1/4 cup dark chocolate shavings

1 tablespoon cherry liqueur (optional)


Instructions

1. Preheat oven to 350°F and line a 10×15-inch jelly roll pan with parchment paper.

2. Beat eggs and granulated sugar in a large bowl for 5–7 minutes until pale and tripled in volume.

3. Sift in flour, cocoa powder, baking powder, and salt. Gently fold to combine.

4. Add vanilla extract and fold once more until smooth.

5. Spread batter evenly in the pan and bake for 10–12 minutes or until springy to the touch.

6. While hot, roll cake in a clean towel dusted with powdered sugar. Let cool completely.

7. Whip heavy cream and powdered sugar until soft peaks form. Chill until ready.

8. Gently unroll cake, spread whipped cream evenly, and top with cherry halves.

9. Roll the cake back up tightly. Brush with cherry liqueur if using.

10. Garnish with more whipped cream, dark chocolate shavings, and whole cherries.

Notes

Make sure to roll the cake while it’s still warm to prevent cracking.

Use chilled utensils and bowl when whipping cream for best results.
