Ingredients

100 g mascarpone cheese

150 ml heavy cream

120 g dark chocolate (60–70% cacao)

2 gelatin sheets

40 g granulated sugar

60 g glucose syrup

1 tsp vanilla extract

6 cookie rounds (shortbread or digestive style)


Instructions

1. Bloom gelatin sheets in cold water for 5–10 minutes.

2. Melt dark chocolate gently over a bain-marie or microwave in short bursts.

3. In a bowl, whisk mascarpone with sugar and vanilla extract until smooth.

4. Warm a small portion of cream, dissolve the bloomed gelatin in it, then add to the mascarpone mixture.

5. Fold in the melted chocolate.

6. Whip remaining cream to soft peaks and gently fold into the mascarpone mix.

7. Pour mousse into silicone dome molds, filling about ¾ full.

8. Press a cookie round into each dome. Freeze overnight or at least 6 hours.

9. To make the mirror glaze, heat sugar, glucose syrup, and water until simmering.

10. Remove from heat, stir in bloomed gelatin, then pour over chopped chocolate. Blend until smooth.

11. Cool glaze to 90°F (32°C).

12. Unmold frozen domes, place on rack, pour glaze over in a single pour.

13. Let glaze drip off, transfer to serving base, decorate with chocolate curls.

Notes

For best results, use high-quality dark chocolate with at least 60% cocoa content.

Let domes sit for 10 minutes at room temperature before serving for optimal mousse texture.
