2 tablespoons granulated sugar
8 ounces cream cheese, softened
6 ounces white chocolate, melted
1/4 cup heavy cream
1 teaspoon vanilla extract
8 ounces dark chocolate, finely chopped
3/4 cup heavy cream
1 1/2 cups fresh raspberries
Mint leaves for garnish
Instructions
1. Preheat the oven to 350°F.
2. Stir together the chocolate cookie crumbs, melted butter, and granulated sugar until evenly moistened.
3. Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan.
4. Bake the crust for 8 minutes, then let it cool completely.
5. Beat the softened cream cheese until smooth.
6. Mix in the melted white chocolate, 1/4 cup heavy cream, and vanilla extract until creamy and fully combined.
7. Spread the white chocolate filling evenly into the cooled crust.
8. Chill the tart for 30 minutes to help the filling firm up.
9. Place the chopped dark chocolate in a heat-safe bowl.
10. Heat 3/4 cup heavy cream until steaming but not boiling, then pour it over the dark chocolate.
11. Let it sit for 1 minute, then stir until smooth and glossy.
12. Cool the ganache for 5 minutes, then pour it over the chilled filling.
13. Smooth the top gently with a spatula.
14. Refrigerate the tart for at least 3 hours, or until fully set.
15. Top with fresh raspberries and mint leaves before serving.
Notes
Use good-quality dark chocolate for the smoothest ganache and the richest flavor.
Add the raspberries just before serving so they stay fresh and do not release too much moisture.
