Ingredients

For the crust:

1 and 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

6 tablespoons unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

2/3 cup granulated sugar

2 large eggs

1/2 cup sour cream

1 teaspoon vanilla extract

Zest of 1 lemon

For the lemon swirl:

1/2 cup lemon curd (store-bought or homemade)


Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the pan to form the crust.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in sour cream, vanilla, and lemon zest.
  5. Pour filling over the crust. Drop spoonfuls of lemon curd and swirl with a knife.
  6. Bake 35-40 minutes until set but slightly jiggly.
