Ingredients

15 oz ricotta cheese

10 oz frozen spinach, thawed and squeezed dry

1 large egg

1 cup grated Parmesan cheese

1 ½ cups shredded mozzarella cheese

1 pinch nutmeg

¼ tsp salt

¼ tsp black pepper

2 cups marinara sauce

1012 fresh lasagna sheets (or softened no-boil sheets)

2 cloves garlic, minced (optional)

½ small onion, finely chopped (optional)

Fresh basil or parsley, for garnish


Instructions

1. In a large bowl, combine ricotta, spinach, egg, Parmesan, nutmeg, salt, and pepper. Stir well to create the filling.

2. Preheat oven to 375°F (190°C). Grease a baking dish and spread a thin layer of marinara sauce on the bottom.

3. Place filling along one edge of each pasta sheet and roll tightly. Cut in half if needed.

4. Arrange rolls seam side down in the prepared baking dish.

5. Pour remaining marinara over the rolls. Sprinkle mozzarella and extra Parmesan on top.

6. Cover with foil and bake for 25 minutes.

7. Remove foil and bake for another 10 minutes until cheese is golden and bubbly.

8. Let rest for 5–10 minutes before garnishing with fresh herbs and serving.

Notes

For an extra festive touch, add finely chopped sun-dried tomatoes or roasted red peppers to the filling.

Letting the dish rest before serving helps the rolls hold together and enhances flavor.
