Ingredients
200 g active sourdough starter
420 g all-purpose flour
250 ml eggnog
1 tbsp honey
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 1/2 tsp salt
Instructions
1. In a large bowl, combine sourdough starter, eggnog, honey, cinnamon, and nutmeg. Mix well.
2. Add the flour and mix until fully incorporated with no dry patches. Cover and rest for 30 minutes.
3. Perform 4 sets of stretch and folds every 30 minutes over 2 hours.
4. Cover and let the dough rise at room temperature for 6–8 hours until doubled.
5. Shape the dough into a boule and transfer to a floured proofing basket.
6. Cover and refrigerate overnight for 10–12 hours.
7. Preheat Dutch oven at 475°F (245°C). Score the loaf.
8. Bake covered for 20 minutes, then uncovered for 20–25 minutes until golden brown.
9. Cool completely before slicing.
Notes
For a richer flavor, use homemade or full-fat eggnog.
Make sure your starter is active and bubbly before mixing the dough.
