Description
These Flourless Peanut Butter Muffins are the kind of easy recipe I get excited to make because they deliver big flavor with very little fuss. Soft, rich, and packed with peanut butter goodness, they come together with simple pantry staples for a quick breakfast, healthy snack, easy dessert, or grab-and-go treat. If you are looking for breakfast ideas, food ideas, an easy recipe for busy mornings, or a naturally flourless muffin that still tastes bakery-worthy, this one deserves a spot in your kitchen.
Ingredients
1 cup creamy peanut butter
2 ripe bananas, mashed
2 large eggs
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
1. Preheat the oven to 350°F and grease or line a 12-cup muffin pan.
2. In a large bowl, mash the bananas until mostly smooth.
3. Add the peanut butter, eggs, honey, and vanilla extract, then stir until fully combined.
4. Mix in the baking soda and salt until evenly incorporated.
5. Fold in the chocolate chips, saving a few for the tops if desired.
6. Divide the batter evenly among the muffin cups.
7. Bake for 18 to 22 minutes, until the tops are set and a toothpick inserted near the center comes out mostly clean.
8. Cool in the pan for 10 minutes, then transfer to a wire rack before serving.
Notes
Use very ripe bananas for the best sweetness and the softest texture.
Let the muffins cool slightly before removing them from the pan so they hold together beautifully.
