3 large eggs (separated)

1/3 cup full-fat cottage cheese

1/4 teaspoon cream of tartar

1/8 teaspoon salt (optional)

1/2 teaspoon baking powder (optional)


Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two clean bowls.
  3. Add cream of tartar to the egg whites and beat with a hand or stand mixer until stiff peaks form.
  4. Mix the egg yolks and cottage cheese in a separate bowl until smooth.
  5. Gently fold one-third of the whipped egg whites into the yolk-cheese mixture.
  6. Slowly fold in the remaining egg whites without deflating them.
  7. Spoon the batter into rounds on the baking sheet, leaving space between each.
  8. Bake for 25–30 minutes or until golden and firm to the touch.
