Description

Ingredients

4 boneless skinless chicken thighs or breasts

1 cup uncooked long grain white rice

1 can cream of chicken soup

1 can cream of celery soup

1 cup chicken broth

1 packet dry onion soup mix

2 tablespoons melted butter (optional)

1 teaspoon chopped fresh thyme or parsley (optional)


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.

2. In a bowl, stir together rice, cream of chicken soup, cream of celery soup, and chicken broth. Pour into baking dish.

3. Place chicken pieces on top of rice mixture in an even layer.

4. Sprinkle dry onion soup mix over the chicken.

5. Drizzle melted butter over top if using.

6. Cover tightly with foil and bake for 1 hour and 15 minutes.

7. Remove foil and bake an additional 10–15 minutes to brown the top.

8. Let rest for 5–10 minutes before serving. Garnish with thyme or parsley if desired.

Notes

Use thighs for juicier results, but breasts work great too.

This casserole freezes beautifully before or after baking.
