Ingredients

2 pounds beef short ribs

4 large yellow onions, thinly sliced

3 tablespoons butter

1 tablespoon olive oil

4 cloves garlic, minced

1 cup red wine

6 cups beef stock

2 teaspoons Worcestershire sauce

2 bay leaves

1 teaspoon dried thyme

Salt and black pepper, to taste

1 French baguette, sliced

1 ½ cups shredded Gruyère cheese


Instructions

1. Pat short ribs dry, season with salt and pepper, and sear in olive oil until browned. Remove and set aside.

2. In the same pot, melt butter and add onions. Cook over low heat for 35–40 minutes until deeply caramelized.

3. Add garlic and cook until fragrant. Deglaze with red wine, scraping the pot, and reduce by half.

4. Add beef stock, Worcestershire, bay leaves, thyme, and return the short ribs. Simmer covered on low for 2.5 to 3 hours.

5. Remove short ribs, shred meat, and discard bones. Return meat to pot and season.

6. Toast baguette slices and top with Gruyère. Broil until bubbly and golden.

7. Serve soup hot with cheese toasts on top or broiled directly in oven-safe bowls.

Notes

For even deeper flavor, caramelize the onions the day before.

Use a mix of Gruyère and mozzarella for extra meltiness and browning.
