Ingredients
2 pounds ground beef
2 large yellow onions, thinly sliced
1 tablespoon butter
1 teaspoon garlic, minced
1 teaspoon dried thyme
1/2 cup beef broth
1 tablespoon Worcestershire sauce
1 cup breadcrumbs
2 large eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
6 slices Swiss cheese
Instructions
1. In a skillet, melt butter over medium-low heat. Add sliced onions and cook for 25–30 minutes until caramelized. Stir in garlic, thyme, beef broth, and Worcestershire. Let it simmer for a few minutes and then remove from heat.
2. In a large bowl, combine ground beef, breadcrumbs, eggs, salt, pepper, and 1/4 of the onion mixture. Mix until just combined—avoid overmixing.
3. Form the mixture into a loaf on a parchment-lined baking sheet.
4. Bake at 375°F (190°C) for 35–40 minutes.
5. Remove from the oven, top with Swiss cheese and the remaining onion mixture.
6. Return to oven for 10 more minutes until cheese is melted and bubbly.
7. Let rest for 5–10 minutes before slicing. Serve warm.
