Ingredients

4 bone-in pork chops (1-inch thick)

3 large yellow onions, thinly sliced

2 tablespoons unsalted butter

2 tablespoons olive oil

2 cloves garlic, minced

1 cup beef broth

1 teaspoon fresh thyme or ½ teaspoon dried

1 cup shredded Gruyère or Swiss cheese

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Melt butter and olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook for 25–30 minutes until golden and caramelized.

2. Season pork chops with salt and pepper. In a separate skillet, sear them in olive oil over medium-high heat, about 3–4 minutes per side.

3. Remove pork and add garlic to the pan. Sauté for 1 minute, then pour in beef broth to deglaze. Scrape up any browned bits. Add thyme and return onions to the pan.

4. Place pork chops back in the skillet and spoon onions over them. Top each chop with shredded cheese.

5. Cover and bake at 375°F for 15–20 minutes, or until the pork is cooked through and cheese is melted.

Notes

Let the onions caramelize low and slow—this builds deep flavor.

Swap Gruyère for provolone or mozzarella if preferred.
