Ingredients

3 cups all-purpose flour

2 cups granulated sugar

1 1/2 cups vegetable oil

3 large eggs

2 teaspoons vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon ground cinnamon

1/4 teaspoon ground nutmeg

3 cups chopped apples (Granny Smith or Honeycrisp)

1 cup chopped pecans or walnuts (optional)

Instructions

1. Grease and flour a 10-12 cup bundt pan. Preheat oven to 325°F (163°C).

2. In a medium bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.

3. In a large mixing bowl, beat sugar, eggs, and oil until smooth. Stir in vanilla.

4. Gradually add dry ingredients to wet mixture until just combined.

5. Fold in chopped apples and optional nuts.

6. Pour batter into the prepared bundt pan and smooth the top.

7. Bake for 60–75 minutes or until a toothpick inserted comes out clean.

8. Cool in pan for 15–20 minutes, then invert onto a wire rack to cool completely.

9. Optionally dust with powdered sugar or drizzle with glaze before serving.

Notes

For extra texture and warmth, use half brown sugar and half granulated sugar.

Make sure apples are chopped uniformly for even baking.
