Ingredients

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon baking soda

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup buttermilk

⅓ cup rainbow sprinkles (jimmies)

½ cup unsalted butter (for filling)

1 cup marshmallow fluff

1 ½ cups powdered sugar

½ teaspoon vanilla extract (for filling)


Instructions

1. In a medium bowl, whisk together flour, baking powder, and baking soda. Set aside.

2. In a separate large bowl, beat butter and sugar until light and fluffy.

3. Mix in the egg and vanilla, then add buttermilk and mix until smooth.

4. Gradually stir in the dry ingredients. Gently fold in the rainbow sprinkles without overmixing.

5. Scoop dough onto a lined baking sheet and bake at 350°F for 10–12 minutes. Cool completely.

6. Prepare filling by beating butter, marshmallow fluff, powdered sugar, and vanilla until fluffy.

7. Spread filling on the flat side of half the cookies and top with the other halves to sandwich.

Notes

Chill the dough for 10 minutes before scooping to prevent spreading.

Use a piping bag for a neat filling finish and roll sides in extra sprinkles if desired.
