Ingredients

Chicken Balls:

1 lb ground chicken

1/3 cup breadcrumbs

1/4 cup grated Parmesan

2 cloves garlic, minced

1 egg

1 tsp dried parsley

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

Garlic Butter Sauce:

3 tbsp unsalted butter

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

Creamy Parmesan Pasta:

8 oz fettuccine or linguine

1 tbsp butter

1 tbsp flour

1 1/4 cups milk

1/2 cup heavy cream

3/4 cup grated Parmesan

Salt and pepper to taste


Instructions

  1. Mix ground chicken, breadcrumbs, Parmesan, garlic, egg, and spices. Form into small balls.
  2. Heat olive oil in a skillet. Sear chicken balls until golden, about 2-3 mins per side. Set aside.
  3. Cook pasta according to package directions. Drain and set aside.
  4. In the same skillet, melt butter. Add garlic, cook until fragrant. Add parsley and chicken balls. Cook 5-6 minutes until done.
  5. In a separate pan, melt butter and whisk in flour. Slowly add milk and cream, whisking to prevent lumps. Simmer to thicken.
  6. Stir in Parmesan until creamy. Season with salt and pepper.
  7. Toss pasta in sauce. Plate and top with chicken balls. Garnish as desired.
