Ingredients

2 chicken breasts

2 tablespoons butter

3 cloves garlic minced

1 1/2 teaspoons Cajun seasoning

8 ounces elbow macaroni

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons cream cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup crispy fried onions

1 tablespoon fresh parsley chopped


Instructions

1. Cut chicken into bite-sized chunks and season with Cajun seasoning.

2. In a skillet, melt butter and sauté garlic until fragrant. Add chicken and cook until golden and done. Remove and set aside.

3. Cook macaroni in salted water until al dente. Drain and set aside.

4. In the same skillet, add more butter if needed. Pour in heavy cream, then add cream cheese and stir until melted.

5. Add cheddar, Parmesan, Cajun seasoning, salt, and pepper. Stir until smooth and creamy.

6. Add cooked macaroni and mix to coat. Simmer 2–3 minutes until thickened.
