Ingredients
2 cod fillets
2 tablespoons olive oil
3 tablespoons unsalted butter
4 garlic cloves minced
1 tablespoon chopped parsley
1 teaspoon chili flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Pat cod fillets dry with paper towels and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Sear the cod for 3–4 minutes on one side until golden.
4. Flip and cook another 3 minutes until opaque and flaky. Remove from pan.
5. Reduce heat to medium, add butter and minced garlic to the same skillet.
6. Sauté garlic for 1 minute until fragrant.
7. Stir in parsley and chili flakes, cook for 30 seconds.
8. Return cod to skillet, spoon sauce over fillets, warm through and serve.
Notes
Always pat the fish dry for a better sear and texture.
Don’t overcook the cod—it should flake easily with a fork but still be juicy.
