Ingredients
1 center-cut beef tenderloin (about 3 lb)
6 tablespoons unsalted butter, softened
4 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 tablespoon olive oil
2 teaspoons kosher salt
1 teaspoon freshly cracked black pepper
Instructions
1. Pat the beef tenderloin dry and season generously with salt and pepper. Let rest at room temperature for 45 minutes.
2. Preheat oven to 425°F (218°C).
3. In a skillet over medium-high heat, add olive oil and sear the tenderloin on all sides until browned.
4. In a bowl, mix softened butter, garlic, rosemary, and thyme to form a herb butter.
5. Place the seared tenderloin on a roasting pan and coat completely with the herb butter.
6. Roast for 25–30 minutes or until internal temperature reaches 130°F for medium-rare.
7. Remove from oven and let the roast rest, covered with foil, for 15 minutes before slicing.
8. Serve with melted herb butter from the pan.
Notes
For the best flavor, use fresh herbs instead of dried.
Always use a meat thermometer to avoid overcooking your tenderloin.
