Ingredients
1.5 pounds boneless skinless chicken breasts or thighs
1.5 pounds gold potatoes, chopped
4 cloves garlic, minced
1 cup grated parmesan cheese
1 cup heavy cream
1 cup chicken broth
3 tablespoons unsalted butter, melted
1 teaspoon Italian seasoning
0.5 teaspoon salt
0.25 teaspoon black pepper
Optional: chopped fresh parsley for garnish
Instructions
1. Heat oil in a skillet over medium-high heat. Sear chicken pieces for 2–3 minutes per side until golden.
2. Add chopped potatoes to the bottom of the crockpot. Layer seared chicken on top.
3. Sprinkle garlic, Italian seasoning, salt, and pepper over the top.
4. In a bowl, whisk together chicken broth, cream, butter, and parmesan. Pour evenly over chicken and potatoes.
5. Cover and cook on low for 5–6 hours or high for about 3 hours, until chicken is cooked through and potatoes are fork-tender.
6. Gently stir before serving. Garnish with extra parmesan or parsley.
Notes
For extra richness, substitute half the cream with cream cheese.
