Ingredients
2 large boneless skinless chicken breasts
¾ cup panko breadcrumbs
½ cup grated Parmesan cheese
2 cloves fresh garlic minced
2 large eggs beaten
½ cup all-purpose flour
2 tablespoons olive oil
1 tablespoon butter optional
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Pound chicken breasts to even thickness and pat dry. Season with salt and pepper.
2. Set up 3 shallow bowls: flour in the first, beaten eggs in the second, and a mix of panko, Parmesan, and garlic in the third.
3. Dredge each chicken breast in flour, dip in egg, then press into breadcrumb mixture to coat fully.
4. Heat olive oil and butter in an oven-safe skillet over medium-high. Sear chicken 2–3 minutes per side until golden.
5. Transfer skillet to preheated oven at 375°F (190°C) and bake 10–15 minutes until internal temp is 165°F.
