Ingredients
2 ½ pounds sweet potatoes, peeled and sliced
2 cloves garlic, minced
1 ½ cups heavy cream
1 ½ cups Gruyère cheese, shredded
2 tablespoons butter
1 ½ teaspoons salt
1 teaspoon black pepper
2 teaspoons fresh thyme leaves
Instructions
1. Preheat oven to 375°F (190°C) and butter a medium baking dish.
2. Peel and thinly slice sweet potatoes into 1/8-inch rounds.
3. In a saucepan, combine heavy cream, minced garlic, butter, salt, and pepper. Simmer for 2–3 minutes until fragrant, then remove from heat.
4. Arrange sweet potato slices vertically in the baking dish in tight rows.
5. Pour cream mixture evenly over the potatoes.
6. Sprinkle shredded Gruyère and thyme between layers and on top.
7. Cover with foil and bake for 30 minutes.
