Ingredients
1 9-inch pie crust, pre-baked
1 cup semi-sweet chocolate chips
1 14-ounce can sweetened condensed milk
2 large eggs
1 teaspoon vanilla extract
1 cup chopped pecans
1 1/3 cups sweetened shredded coconut
2 tablespoons butter, unsalted
Instructions
1. Preheat oven to 350°F (175°C). Prepare your 9-inch pie crust in a pie dish and blind bake for 10 minutes, then let cool.
2. In a small saucepan, melt butter and chocolate chips over low heat until smooth. Remove from heat.
3. Stir in sweetened condensed milk, eggs, and vanilla extract until well combined.
4. Fold in chopped pecans and 2/3 cup of the shredded coconut. Pour mixture into the pie crust.
5. Sprinkle the remaining coconut over the top evenly.
6. Bake for 30–35 minutes, or until the center is just set and the coconut topping is golden.
7. Let cool at room temperature for at least 1 hour before slicing. Serve warm or chilled.
