Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 ½ teaspoons ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
⅛ teaspoon ground nutmeg
½ cup unsalted butter, softened
½ cup brown sugar
1 large egg
½ cup molasses
½ cup hot water
¼ cup buttermilk
1 teaspoon vanilla extract
1 cup cream cheese frosting (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch or 9×9-inch pan or line with parchment paper.
2. In a bowl, whisk flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
3. In another bowl, cream butter and brown sugar until fluffy.
4. Beat in the egg, molasses, and vanilla until smooth.
5. Alternately mix in hot water and buttermilk until combined.
6. Add dry ingredients to wet ingredients and stir until just blended.
7. Pour into prepared pan and smooth the top.
8. Bake for 35–40 minutes, or until a toothpick comes out clean.
9. Let cool completely in pan on a wire rack.
10. Top with cream cheese frosting and a dusting of cinnamon before serving.
Notes
For best results, use full-flavored unsulfured molasses.
