Ingredients
2 lbs boneless skinless chicken breasts or thighs
1/2 cup honey
4 cloves garlic, minced
1/3 cup tamari (gluten-free soy sauce)
2 tablespoons tomato paste

1/2 teaspoon ground ginger
1 tablespoon cornstarch
1 tablespoon water
2 tablespoons chopped green onions (for garnish)
Instructions

2. Place chicken in the slow cooker and pour sauce over the top.
3. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
4. Remove chicken, shred with two forks, and set aside.
5. Stir in cornstarch slurry to the sauce and cook on HIGH for 15 minutes to thicken.
6. Return shredded chicken to the sauce and stir to combine.
7. Serve hot and garnish with chopped green onions.
