Ingredients

1 cup green olives (pitted)

1 clove garlic

2 tablespoons lemon juice

3 tablespoons olive oil

2 tablespoons fresh parsley (chopped)

1/2 teaspoon red pepper flakes

1/2 teaspoon ground cumin

Salt and black pepper to taste


Instructions

  1. Drain and rinse the green olives if they are packed in brine.
  2. Add olives, garlic, lemon juice, parsley, cumin, and red pepper flakes to a food processor.
  3. Pulse a few times to break down the ingredients.
  4. Slowly drizzle in the olive oil while blending until smooth.
  5. Season with salt and black pepper to taste, then blend again.
  6. Adjust consistency by adding more olive oil or a splash of water if needed.
  7. Transfer to a serving bowl, drizzle with extra olive oil, and garnish with parsley or additional olives.
  8. Serve immediately with pita bread, crackers, or fresh vegetables.
